Airfryer curd pie

I think I have a pie problem! I keep inventing easy pies to make in the airfryer and the keep being delicious. I think one day I should really buy a pie tray. But until then, I’ll struggle with my cake form. Here’s this super quick curd pie which is a blend between the Romanian Easter cake, pasca and the buttermilk pie.

Baking temperature: 160 C with in the airfryer

Ingredients

For the crust:

  • 70 g of cold butter
  • 160 g of flour
  • 1 pinch of slat
  • 5 tablespoons of water

For the filling:

  • 250 of curd cheese
  • 2 eggs
  • 70 g of sugar
  • 1 handful of raisins
  • rum essence to taste
  • 1 teaspoon of lemon peel
  • a bit of milk to thin the filling

Directions

  1. Mix the 70 g of cold butter with the 160 g of flour and a pinch of salt until. Add the water and mix to combine in a ball. Place in the fridge while you prepare the filling.
  2. In a mixer jar add all the ingredients (except raisins): 250 g of curd cheese, 70 g of sugar, two eggs, rum essence, lemon peel. Blend them until very smooth.
  3. Add a bit of milk at the end to thin it if needed and the raisins.
  4. Place the dough in the pie tray pressing with your fingers and making a tall edge to have enough place for the filling. You can bake it a few min in the airfryer, max 5 min, but it is optional.
  5. Add the filling in and bake at 160 C for 25 min.
  6. Take out, let it cool completely and place for a few hours or better overnight.
  7. It is very smooth and flavorful!
