Buttermilk biscuits

With this 7th recipe containing buttermilk, I decided to create a tab for Buttermilk :D. This one is inspired from preppy kitchen, whom I find very reliable for pastry and I love that he uses metric system. I just use the rolling method from Joshua Weissman, since I find that easier and prefer the rectangular shape.

I added a little hack to reduce the quantity to fit in an airfryer. it is much easier and convenient to use the airfryer, but also much faster. Here is how I make it.

Baking temperature airfryer: 10-12 min

Ingredients

  • 150 g of all purpose flour
  • 55 g of cold butter
  • 1 full teaspoon of baking powder
  • 1/4 of teaspoon of baking soda
  • 1 teaspoon of sugar
  • 3/4 teaspoon of salt
  • 115 grams of cold buttermilk

Directions

  1. Mix in the 150g of flour the 1 teaspoon of baking powder, 1/4 teaspoon of baking soda, 3/4 teaspoon of salt, 1 teaspoon of sugar and then add the cubed cold butter.
  2. Mix in with the hand, crumbling the butter.
  3. Add the cold buttermilk in mixing slightly with a spoon and then mix with the hand only to get them combined. Do not overmix.
  4. Flour our table and shape the batter in a rectangular shape.
  5. Cut it into 4 pieces and them place it above each other, then press it down and form a rectangle again.
  6. Cut it into 6 pieces and brush with more buttermilk.
  7. Place it in the preheated airfryer with a baking paper at the bottom for 10-12 min at 195 C or until they look golden.
