I found my favorite salad for this year. My inspiration is fully from Rainbow Plant Life. Not only the vinaigrette is amazing, but I love the use of fennel in this (a relatively new veggie for me) and how quickly it comes together. I consider this a main meal, since the addition of pecans gives me enough protein for a full meal.
Here is what you need for the vinaigrette (picture from her video):

I use apple vinegar, cause that is what I have in my kitchen most often and sometimes honey instead of the maple syrup. It is just a very nicely balanced recipe – add it all in a jar and shake to emulsify:
Now use your favorite green salad, originally she uses rukola and so do I, add some sliced fennel, apple and toasted pecans or walnuts (but please toast them!). Drizzle as much vinaigrette as you wish and it is done:
