Prasorizo

I always wonder what to cook with leek, it is somehow not in my routine to use this veggie and I want to do it more, since it it one of the few ones in season in the cold months. I came across this Greek recipe on DimitrasDishes ans I really liked it: prasorizo.

Servings: 6-6
Preparation and cooking time: 1 hour
Difficulty: easy

Ingredients

  • one onion
  • two garlic cloves
  • 6-7 leeks
  • two cups of rice
  • salt
  • pepper
  • lemon juice
  • olive oil
  • dill (optional, I skipped it)

Directions

  1. Saute the onion with garlic on low fire in olive oil until it gets glossy.
  2. Cut the edible part of the leek, usually under the leaves.
  3. Chop them finely and then add them into a bowl of water and let the sand settle at the bottom.
  4. Take the leek carefully from the water and place it into a strainer.
  5. Add the chopped leek in the pot and let them soften for 10 min.
  6. Add the washed rice with 6 cups of water, salt, pepper and cook on low fire for 20 min with the lid on.
  7. Squeeze lemon juice at the end and it is ready.
  8. In my version I put at the end some duck confit… works so well, if you have it.
