Cabbage wedges in tomato sauce

This recipe is an inspiration from Rainbow Plant Life, one of my other favorite You tubers. i love cabbage in any shape or form and this shape is pretty new for me and I absolutely love it!

Cabbage wedges in tomato sauce

Ingredients

  • 1 cabbage
  • 2 shallots
  • 2 cloves of garlic
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of paprika
  • half a teaspoon of ground coriander
  • some powder cinnamon
  • a bit of freshly ground nutmeg
  • chili flakes to taste
  • salt
  • freshly ground black pepper
  • a can of tomatoes
  • a can of chickpeas
  • lemon
  • a tablespoon of black sugar
  • optional parsley for the top
  • oil for frying

For the sauce:

  • 1 freshly gated garlic clove
  • salt
  • pepper
  • 4-5 tablespoons of tahini sauce
  • 2 tablespoons of sour cream or vegan yogurt
  • lemon
  • honey or maple syrup

Directions

  1. Fry in a hot pan the cabbage wedges until they are well colored or almost charred. Sprinkle them with salt.
  2. In the same pan (in not too charred) add the 1 teaspoon of cumin seeds.
  3. You can add now the two slices shallots, 2 sliced garlic cloves and once they soften add the spices: 1 teaspoon of cumin seeds, 1 teaspoon of paprika, half a teaspoon of ground coriander, some powder cinnamon, a bit of freshly ground nutmeg, chili flakes to taste.
  4. Add the tomato can and crush them with a fork. Add the 1 tablespoon of sugar too.
  5. You can now add back the fried cabbage wedges.
  6. Add add on top of them the canned chickpeas (I always peal their skin to make them softer). Drizzle with some olive oil.
  7. Adjust salt and pepper if needed.
  8. Cover the pan and simmer for 10 min.
  9. Sprinkle some fresh lemon juice on top and optional parsley.
