Celery root soup with apple

I am so happy for this celery soup invention. I have many recipes that call for celery root, but just a little bit. And then I am left with this giant celery in the fridge often going dry and bad. This recipe comes to save it! It is creamy, fresh and so simple to make!

Celery root soup
Cooking time: 30 min
Servings: 4-6
Difficulty: easy


  • celery root
  • 2-3 apples
  • 1 big onion
  • 3-4 tbsp of butter
  • 1/2 tsp of dry thyme
  • half a cup of oat milk
  • 1 chicken cube and water to cover the veggies
  • salt


  1. In a pan melt the butter.
  2. Add first the chopped onion, then the celery and the apple at 2-3 min interval.
  3. Saute them until they soften slightly.
  4. Add the thyme, chicken cube, oat milk and cover with water.
  5. Simmer on low-medium fire for 20 min.
  6. At the end, blend the soup with an immersion blender and it is ready!
