Mascarpone cake with strawberries and baked apple, no bake

I have to admit that cakes are not my specialty nor my choice for a dessert. But there was this one time I wanted to celebrate a special moment with a huge cake looking very “cake-y”. So I came up with this very fast recipe, that gets better and better with every extra day you wait for the juices to soak in: mascarpone cake with strawberries and baked apple

Ingredients

  • 3 slices of cake pastry (I bought mine)
  • 300 g strawberries
  • 150 of baked apple puree (I bought mine, but you can bake 3 apples and blend them with a bit of sugar)
  • 500 g of mascarpone
  • 150-200 g of heavy cream
  • gelatin for 0.5l of liquid
  • 2-3 tbsp of powder sugar for mascarpone
  • 2-3 tbsp of normal sugar for the strawberry sauce

Directions

  1. Mash 8-10 strawberries, mix in the sugar and boil them until they become a paste. Add some water if necessary.
  2. Dissolve the gelatin and let it cool at room temperature.
  3. Beat the heavy cream until it is very stiff.
  4. Mix the mascarpone with the powder sugar and mix in the heavy cream very slowly and with circular moves. Keep a few tbsp of the heavy cream for the final decoration.
  5. On the first layer of the cake arrange the strawberry jelly.
  6. On the bottom of the second layer spread the mascarpone and turn in upside-down on the strawberry jelly layer.
  7. Continue the same with the baked apple jelly. You should aim for this layering:
  8. Cover the cake in mascarpone, too and decorate it according to your taste.
