5 ways to eat rice noodles

I did not say in the title, but these are 5 weird ways to eat rice noodles. You only need inspiration from this post if you are loving rice noodles as I do.

As far as I am concerned, I could eat them with the sauce only. But I do add some greens and all sorts of unexpected meat. The sauce I am using in all of them contains: 1 tbsp of fish sauce, 1 tbsp of soy sauce, 3 tbsp of water, a bit of sugar and lots of fresh lemon or lime + chili flakes. Here are my ideas in the order of the most weird to the more common:

1. Rice noodles with bacon and lamb’s lettuce – add some carrot when frying the bacon and don’t forget the peanuts before serving.

2. Rice noodles with canned tuna and green salad – less than 5 min to prepare, add the usual sauce, peanuts and enjoy it! No cooking is needed, expect the boiled water for the noodles.

3. Rice noodles with salmon meatballs, carrots and kale – as you can see I left out the peanuts for once. If you want to see how I made the meatballs, you can check my salmon recipes here.

4. Rice noodles with soy sprouts, carrots and mushrooms – and peanuts… I fried the soy, carrots and mushrooms in a hot wok with a bit of olive oil. Adding a bit of mint to this makes it even more enjoyable.
