Buckeye cookies

The buckeye cookies are the perfect mix between brownies and peanut butter cookies. You obviously need to like peanut butter in order to enjoy. But if you do, you will find these cookies pretty satisfying.

Ingredients

  • 90 g of all-purpose flour
  • 75 g of butter
  • 3-4 tbsp of sugar (combine brown and white sugar)
  • 1 small or medium egg
  • 2 tbsp of cocoa powder
  • vanilla essence
  • a pinch of salt
  • 1/4 tsp of baking powder

For the filling

  • 2-3 tbsp of peanut butter (add a bit of sugar if it is not sweet)

Directions

  1. Mix the peanut butter with sugar (if not sweet already) and separate it into small heaps.
  2. Place it in the freezer for 1 hour.
  3. Mix the sugar with the room temperature butter.
  4. Add the egg.
  5. Combine it with the flour, cocoa powder, vanilla, salt and baking powder.
  6. It will be a bit sticky, so in order to roll it, I use a bit of extra flour.
  7. Divide the dough into two part: the first one should be shaped into 6 flat circles.
  8. Place the frozen peanut butter in the middle.
  9. Place on top of it the rest of the dough.
  10. Roll each piece into a ball and roll it in some granulated sugar.
  11. Bake it at 175 C for 12 min.
  12. Serve cold, preferably.
