Chana Masala with egg

This recipe called Chana Masala is a simple chickpeas and curry based dish that is very easy and very cheap to make. Chana Masala works wonderfully as a side dish or even main meal next to rice. Although it is very nice next to a steak, I love to eat it with sunny side ups and it goes perfectly with eggs. Therefore it is a perfectly fine choice for even a low carb meal.

Ingredients

  • 1 jar of canned chickpeas (1.5 eur)
  • 1 can of chopped tomatoes (0.8 eur)
  • 2 cloves of garlic
  • 1 onion (0.2 eur)
  • 1 tbsp of fresh ginger
  • ¼ tsp of minced cardamon
  • ½ tsp of curry
  • 1 tbsp of oil
  • salt and pepper

Directions

  1. Fry the onion in a big wok and add after few min the ginger and garlic and let them get softer, but make sure they won’t brown.
  2. Add the curry and cardamom and let them infuse for a minute.
  3. Pour in the tomatoes can and simmer it until it forms a paste.
  4. At this point season with salt and pepper to taste.
  5. Add the chickpeas and cook for 10 more min.
  6. Sprinkle some parsley or coriander on it and serve hot with sunny side up eggs.
