Lemon brownies, quick and easy

These lemon brownies are after Jenny Can Cook recipe. It is indeed as easy as she says and you are getting dirty only one bowl, so not even too many dishes to wash. Perfect!

Besides, if you love lemon and lemon peel as much as I do, this is a perfect cake for you.

Ingredients

  • 125 g of all purpose flour
  • 100 g of sugar (her recipe has 150, but it is already sweet enough for me)
  • 62 grams of yogurt
  • 2 eggs
  • 3 tbsp of oil
  • 1/4 tsp of baking soda
  • a pinch of salt
  • peel from 1-2 lemons
  • 2 tbsp of lemon juice

Glaze

  • 3 heaping tbsp of powdered sugar (I use a lot less than her)
  • zest from 1 lemon
  • 1-2 tbsp of lemon juice

Directions

  1. In one bowl add all the ingredients: flour, sugar, oil, salt, baking soda, eggs, yogurt, lemon peel and juice.
  2. Mix vigorously for 30 seconds until they are well combined.
  3. In a 30×22 cm pan or 19×26 pan add aluminum foil to cover it fully, this way your pan won’t get dirty.
  4. Pour in the dough.
  5. Bake it for 20 min at 175 C.
  6. Once it is done, let it rest for 10 min and pour on top the glazing.
  7. It is ready to be served both warm an cold.
