Ribs with barbecue or honey sauce

Ribs are a delicious meal and I will show you in this post my favorite recipes: one with barbecue sauce and a Czech version with honey. Cooked for a long time they become really tender and simply delicious.

Recommended side dishes for ribs: obligatory horse radish paste, pickles, garlic bread or potatoes.

Ingredients

  • 1 kg of ribs

Spices:

  • 1-2 tbsp of brown sugar (skip this for the honey version)
  • 1 tsp of sweet paprika
  • 1 tbsp of smoked paprika
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder
  • 1 tsp of oregano (skip this for the honey version)
  • salt and pepper to taste

Sauce honey version:

  • 2 tbsp of honey
  • 3 tbsp of ketchup
  • 2 tbsp of mustard

Barbecue sauce option (following Laura in the Kitchen recipe)

  • 1-2 tbsp of butter
  • 1 tsp of paprika (your choice if spicy or smoked)
  • 150 ml of ketchup
  • some water
  • 1 tsp of chili powder
  • 1 tbsp of sweet paprika
  • 1 tbsp of smoked paprika
  • 2-3 tbsp of brown sugar
  • 1 small onion
  • 2 garlic cloves
  • 2 tbsp of balsamic vinegar
  • oil for frying
  • salt and pepper
  • one lemon for rubbing it on the ribs

Direction

Barbecue sauce version

  1. Squeeze a lemon on the ribs, so that the spices stick better.
  2. Place them with the meaty part on the bottom.
  3. Place an aluminum foil on them with the shiny part up, wrap it really well around the tray.
  4. Bake them at 150 C convection oven (or 170 C for traditional oven) for 2.5- 3 hours.
  5. Take them out, there will be a lot of liquid, so you can discard that.
  6. For the barbecue sauce: simply saute your onion and garlic in the oil, add the rest of the ingredients, simmer for 20 min on low then blend them at the end.
  7. It is time to put on the barbecue sauce and grill them for 5 min.
  8. Take them out again, place them with the meaty part on top, brush them again with barbecue sauce and grill them for 5-7 extra min. For this recipe, I inspired myself from Jenny Can Cook recipe.

Honey version

  1. Mix the spices together.
  2. If you want the spices to stick better, you can pour the sauce first, then the spices.
  3. Place them with the meaty part on the bottom.
  4. Place an aluminum foil on them with the shiny part up, wrap it really well around the tray.
  5. Bake them at 150 C convection oven (or 170 C for traditional oven) for 2.5- 3 hours.
  6. Take them out and place the meaty part on top.
  7. There will be a lot of liquid, so you can discard that.
  8. Grill them for 15 minutes until they are nice and well done like in the picture.
