5 ideas for puff pastry with fruits

Puff pastry can be a fun dough to play with and invent all sorts of colorful cookies. The nicest advantage is that you can freeze it and have it at hand any time for a super fast dessert.

Here are some (fully stolen from the Internet) ideas of how to use the puff dough and have a cookie in 20 min.

1. Caramel rose apple pie

I have prepared this one in the cast iron skillet. I thinly sliced 4 apples, added cinnamon and brown sugar on them and let them rest for 30 min. After that, I squeezed all the liquid from the apples and placed them in a rose shape on the puff dough (don’t forget to poke it a few times with a fork). Reserve the liquid. I baked it for 40 min at 190 C: 30 min covered with an aluminum foil and 10 min uncovered.

As for the caramel: bring the reserved liquid to a boil, add 2-3 tbsps of heavy cream and pour it on your freshly baked pie.

2. Pinwheel with blueberries

Cut a square from your pastry and cut all the diagonals, leaving the middle uncut. Start folding each triangle like in the pictures below. Add in the middle some cream cheese mixed with sugar and blueberries and bake it at 200 C for 15 min.

3. Diamonds with strawberries

Cut a square from your pastry fold it into a triangle. Cut a smaller triangle like in the picture, but leave the top of it uncut (where I hold my finger). Open it up and fold the cut lines onto each other. Add in the middle some cream cheese mixed with sugar and half a strawberry and bake it at 200 C for 15 min.

4. Raspberry flower

Cut a square from your pastry and a smaller square into it, leaving the middle of each line uncut. Add in the middle some cream cheese mixed with sugar and 4 raspberries. Fold each corner over the raspberries and connect it in the middle. You can add another raspberry or blueberry in the middle. Bake it at 200 C for 15 min.

5. Braid with apricots or chocolate

Cut a rectangle from your pastry and cut in diagonals, leaving the middle uncut. Add in the middle some cream cheese mixed with sugar and chocolate chips or apricots. Fold like in a braid the cut edges one after the other, making sure you close it well at the top and bottom. Bake it at 200 C for 15 min.

They can be served right away with or without powder. They are even more delicious the second day and they stay just as pretty and colorful with all the combinations of fruits that your heart desires.
