Beetroot salad with goat cheese and pumpkin seeds

For this beetroot salad you will need lamb’s lettuce and soft-creamy goat cheese. Lamb’s lettuce also known as corn salad or feldsalat is a nutty sweet salad which goes perfectly with beetroot. This is the best variety for this salad, arugula, spinach or any other green salad won’t be as good for this combination.

Also not any type of goat cheese goes well for this salad, only the soft and creamy type. In order to complete this salad you will need a good sprinkle of pumpkin seeds, olive oil, balsamic vinegar and salt.

It is a nutritious and balanced salad. The olive oil and cheese offer enough fat and the pumpkin seeds and cheese contain a decent amount of protein (my estimation is at least 16 g or 38% Daily Value). Besides it is high in iron, which is difficult to find in vegetarian products: the salad, beetroot and pumpkin seeds all contain iron and the lamb’s lettuce contains a decent amount of vitamin C, which will help the absorption of non-heme iron (the one not found in the meat).

Besides it being healthy, it tastes very good as well. That is if you like beetroot. It is pleasantly sweet and sour and very creamy and nutty.
