Peanut butter pumpkin fudge

From the pumpkin series, I really wanted to add to this category the peanut butter pumpkin fudge. A very easy recipe and very delicious, if you are among the people addicted to peanut butter as I am.

I can be low-carb even, if you don’t add the maple syrup. And it is sweet enough from the pumpkin.

Just as a reminder for myself, pumpkin contains the incredibly low amount of 26 calories in 100 grams. It contains only 2.8 g of sugar and 170% Daily Value of Vitamin A and even 4% of the very rare Iron. So do not hesitate to snack on pumpkin, straight out of the oven:

Peanut butter pumpkin fudge ingredients

  • 1 cup of peanut butter
  • 1/4 cups of pumpkin puree
  • 2 tbsp of coconut oil
  • 1 tsp of maple syrup (optional)
  • vanilla essence
  • cinnamon
  • pinch of salt

Put all the ingredients on low fire until they are combined. Put them in one small tray or individual muffin shapes and place them in the freezer. I serve them straight from the freezer. They contain a lot of fat, therefore are super ok to be eaten very cold, as an ice cream. Here is how the peanut butter pumpkin fudge looks like:
