Breaded zucchini wedges

I did not add a post for a long time to my zucchini tag, so these breaded zucchini wedges come just in time. The idea is again courtesy of Mihaela, who always has the greatest recipes.

This recipe is not even fried, it contains like a teaspoon of oil, which is plenty for the airfryer. But it turns out crunchy, soft inside and very tasty as a snack or side dish.

Breaded zucchini wedges

Preparation time: 5-7 min
Cooking time: 15 min
Airfryer setting: 200 C, no preheating
Difficulty: easy

Ingredients

  • 2 small zucchinis
  • 1 egg
  • a bit of milk
  • bread crumbs
  • 2-3 tbs of finely grated parmezan
  • paprika powder
  • thyme
  • salt and pepper

Directions

  1. Cut the zucchinis into wedges.
  2. Mix one egg with a bit of milk and salt and pepper.
  3. Grate the parmezan on the finest setting of your grater. Mix it with bread crumbs, salt, pepper, paprika powder and thyme.
  4. Dunk the zucchini in the egg then cover it with the bread crumbs mix.
  5. Place in the cold airfryer.
  6. Sprinkle a bit of olive oil.
  7. Cook at 200 C for 15 min.
  8. They are ready to be served as a side dish or as a snack with a garlic dip.
