Cold noodles salad

I first tasted this salad at a friend’s place and I am obsessed with it ever since. It is so easy to make and so satisfying to eat. Besides, it is very versatile: you can top it with anything you’d like and make it a main meal – for example  egg, shrimps, falafel. Or keep it simple as a side dish and serve it next to some freshly steamed Chinese dumplings.

Ingredients for 1 portion

  • 1 serving of bean noodles (I used soy noddles, better than rice because they stick a lot less)
  • 1 small cucumber
  • 2 celery sticks
  • 1-2 carrots
  • fresh coriander leaves
  • optional: additional pepper and/or mushrooms

For the sauce:

  • 1 finely chopped garlic
  • 1 tsp of fish sauce
  • 1 tsp of vinegar or lime
  • 1 tsp of sugar
  • 1 tsp of soy sauce
  • chili flakes or fresh chilies

Directions

It is so simple! Boil the noodles according to the instructions on the package and rinse them in cold water. Then let them strain. Cut the veggies julien or with the special tool that peels them in fine strips. Mix them all, add the sauce and toss well. Then add the coriander leaves and toss again.

Serve as side dish with dumplings.

Or add egg, shrimps, falafel or any type of meat at it can become a main meal.
