Yet another cottage cheese recipe. I admit there is a bit of an obsession with cottage cheese, but it is also such a wonderful way to get your proteins from. And especially in a lovely sweet, but healthy breakfast. And the nutritional value per portion (4 pancake) is not too bad:

Cottage cheese pancakes

Ingredients:
- 200 g of cottage cheese
- 2 eggs
- 1 tablespoon of sugar (you can also skip it)
- 1 teaspoon of vanilla essence
- 80 g of whole-wheat flour
- 1 teaspoon of baking powder
- 1 pinch of salt
- few drops of oil for frying
Directions
- Blend the 200 g of cottage cheese with the 2 eggs. Sometimes I add a few drops of milk if I need it more liquidy.
- Add the 1 tablespoon of sugar, a pinch of slat and a teaspoon of vanilla essence.
- Add the 80 g of integral flower and the teaspoon of baking powder and mix only until combined.
- In a hot nonstick pan add a few drops of oil and cook the pancakes on medium heat on both sides until they are golden.
- Enjoy them next to some delicious berries, a drizzle of honey or maple syrup or even with freshly baked pears.
