Baked cherry tomatoes pasta

This baked cherry tomatoes pasta recipe is a refreshing summer dish, creamy and full of umami.

Ingredients

  • 30-40 cherry tomatoes
  • red pepper (optional)
  • 2 garlic cloves
  • 2 handful of grated parmezan
  • 10-15 leaves of fresh basil
  • pasta
  • salt and pepper
  • olive oil

Directions

  1. Drizzle on the tomatoes, pepper and garlic  some olive oil and salt.
  2. Bake them at 200 C for 45 min. If this is too long, you can cook them in the pan directly.
  3. Once done, mash them a bit and put them in a pan on small fire.
  4. Add half of the parmezan.
  5. You can now add the basil, the cooked pasta, pasta liquid if needed and black pepper.
  6. Add more parmezan on top and ready.
